From Our Home to Yours... Moravian Stew aka Sauerkraut & Pork Stew Recipe

We ate this at a restaurant about two years ago and my DH, Todd, and I love to cook.  We also LOVE to recreate meals we have eaten at restaurants.  So here is our version of  Moravian Stew aka Sauerkraut & Pork Stew:

Ingredients:
  • 2 to 2.5 lbs. of stew pork and stew beef (or your favorite cut of each meat -- I like stew beef and pork shoulder/Boston butt). Use whatever percent mix you'd like. I like it about 50/50, but Erika and the kids like pork.
  • 2 large onions, thinly sliced
  • 3-4 large carrots, split in half and cut in half inch slices
  • 3-4 large spears of celery, cut similarly
  • 4-8 cloves of garlic -- sliced (amount is based on your love of garlic... I like a lot)
  • 1/2 medium to large head of cabbage, sliced to your desired thickness -- I like thin sliced like corn-beef and cabbage style
  • 2 15-16 oz cans regular or Bavarian sauerkraut (I prefer the bit of sugar and caraway seeds in the Bavarian style -- I used Silver Floss)
  • 2-3 tablespoons oil for braising
  • 1 qt chicken and 1 qt beef stock, boxed premade or homemade. the salt content in the stock is the ONLY salt in the stew... so if you make your own you have to make it sufficiently salty to season a good amount of meat and vegetables. 2 boxes of Rachel Ray, W. Puck's, Campbells... whatever, has about 4 grams of salt/quart. if you have salt issues, by all means use low salt stock or use Lite Salt (potassium chloride/KCl).
  • traditional recipes call for a teaspoon of caraway seeds... i use just what's in the sauerkraut
  • 1 pt or more sour cream
  • 2-4 tablespoons flour if you roux the sour cream (you'll get what I mean in the directions)

Directions:
Photo Found at Recipes from a German Grandma
The veggie prep takes most of your time in this stew. Cut the cabbage, carrots, celery, onions and garlic. If you are making up stock from bullion or using pre-made stock paste, get the quart of chicken and quart of beef stock ready.

If your meat cuts are too large (from the store) cube it down to your desired size. Get your biggest pot (I have a large copper-bottomed kettle pot) and heat it with oil on HIGH. Drop in the meat and braise it until no longer pink... or cook it browned if you like... your choice. Add garlic and aromatics (celery, carrots and onions) and continue to cook on high. If you are running low on liquid from the meat, pour in the two cans of kraut...otherwise wait until the end. Add the shredded cabbage, pour the two cans of kraut on top, then pour stock over the whole shabang.

Bring it to a boil. Reduce to medium for about a half hour. Lower to simmer for 6 hours. There will be a point when it is well cooked but the cabbage and carrots, etc aren't starting to fall apart. If you go to 8-10 hours the veggies are likely to go to the consistency almost of baby food. Some like it this far gone, and my first of two pots this week (on Sunday) went that far. Its good, but going six hours is a nice balance and gives the stew some body.

You make a bowl and put a dollop to tablespoon of sour cream in and mix. Eat and enjoy.

The European way is to mix flour into the sour cream and make a sort of roux, then stir it into the stew about 30 minutes before done to thicken. Either way is incredibly good. You can see I have a good deal of variables. Play with the balance and see what you like. More chicken stock than beef, or vice-versa. More carrots, less carrots. More onions. Well braised meat or barely browned, etc etc.

From our home to yours.....enjoy!
Blessings,
Mama Erika (& Papa Todd)

On Raising Little Saints: Mama Mission for November

Don't you just hate how most blogging Mamas make their houses look like everything is perfect and beautiful and nothing goes wrong?  lol....Blogs make it look this way because we like to share the good news or the things we are most proud of but not necessarily the things we are ashamed of or the things that we don't want others to know.  I mean I don't think our entire lives should be blogged but the reality is we are all imperfect humans trying to achieve perfection in some ways.

On All Saints Day, Father gave a homily on the Saints where he recalled the vast number of people who had been beatified or canonized during Pope John Paul II's pontificate.  He explained the reason for this, Blessed John Paul II wanted to make it very clear that the Lord calls us all to Heaven and hence all to be Saints.  This is why he proclaims so many as saints during his pontificate, he wanted us to see that saints were like us, they were seeking the same things as us, to be saints, just that here on Earth they were able to achieve marvelous things - one day at a time.

This got me thinking about my life and the things I'd like to accomplish and the stumbling blocks I sometimes create on my own because, "life happens!"  I realized too that one of the many benefits of being a blogging Mama is accountability. Maybe you aren't holding me accountable but for some reason I feel like if I publish it on my blog, I need to keep up my end of the promise and do it.  Plus, it makes me think of what kind of example I am setting for my kids.  My goal is to Raise Little Saints, the main purpose for this blog and hence, it's name....so to do so, I believe, I need to set a good example to my children by goal setting and achieving.

A good friend of mine who is discerning her vocation (she is single and contemplating becoming a nun) had a conversation last night.  She, in her quest to hear God's voice, is going to do a 40 Day Fast but is scared to fail and not make it the 40 days.  Since I've done 40 Days for Priests where we prayed as well as fasted and abstained from worldly things, my advise to her was to take it a week at a time, set up small goals.  Her and I have similar types of spiritual blocks, we set ourselves up for failure by setting spiritual goals that are too high and far to reach.  Which is why I was able to give her this piece of advise, one that I needed to hear for myself, isn't that funny?  "It is in the small steps that we achieve greatness", I believe Blessed Mother Teresa used to say.  :)

A couple of months ago I stumbled on Mama Jenn's amazing idea.  She, like I feel, holds herself accountable when she blogs about something so she started this great idea for blogging Mamas.  She calls it "Mama’s Mission of the Month"! Her hope is "that this will help me {and you} follow through on some of the goals that we have set for the month"! So, if you are a mama and you want to join in, check out the intro post over at Mama Jenn!

Mission of the Month

I'd like to add further that if you don't have a blog and would like to participate you can feel free to add your Missions in the combox of my monthly missions  :)  This way you can participate even if you don't have a blog and don't care to start one.

I will post my Mission of the Month on the 1st of each month, I will link my post to Mama Jenn's monthly mission post (she has a linky available until the 5th).  On each subsequent post you will not only put your mission but also your accomplishments.

When you post the new mission for the next month, you will list your Missions Accomplished under this:

Mission Accomplished

and hopefully not need to list them under this, but sometimes life happens and you might need it (and that is what next month is for right?):

Mission NOT Accomplished YET

Mama Jenn says, "Your mission can be as big or as small as you would like it to be…just be sure that it is something that you can realistically accomplish! Now, I must be clear, this is meant to encourage you to accomplish some of those things that you may not have otherwise accomplished. This is NOT intended to bring condemnation of any sort! If you don’t accomplish your mission…no worries…give it a shot the following month."

These are my missions for the month of November:

1.  Get up at 6:30AM.

2.  Get to bed by 10:30PM.

3.  Update the Chore Chart now that the kids are ready for new jobs (smaller kids ready for more responsibilities).

4.  Finish reading Raising Real Men for Timberdoodle.

5.  Keep up with reading and using Magnificat on a daily basis to start and end my days with prayers.

6.  Go to daily Mass.

7.  Get to Co-Op in time for the Rosary which isn't mandatory so I use that time to get there instead of being there :(.

8.  Purge toys and clothing by giving the good things away to those who need them.

9.  Stick to my daily schedule with the kids as much as possible (I know things happen but I really need to be more in this).

10. Catch up with all the reviews I need to do for this blog (I have a box full of goodies).

So what do you say?  Want to join me in this?

Friends who are Raising Little Saints like we are and
joining me on the Monthly Missions:

Mama Krystin's November Mission

Mama Pattie's November Mission

Are you in?  Leave me a link in the combox to your blog where your Mission is and I'll link it up to mine! :)

Six Practical Means to Overcome Sins and Faults of the Tongue

Ask a Carmelite Sister...

Sins and Faults of the Tongue: To Speak or not to Speak – That is the Question

Dear Sister,
There is a lot of noise around me – constantly. So much chatter. It seems to me that conversations in general are getting more superficial. I’m reminded of the title of one Shakespeare’s plays. It seems to fit what I am trying to say – Much Ado about Nothing. What are your thoughts?

Written by Sister Laus Gloriae, O.C.D. the Carmelite sister over at Integrated Catholic Life...hop on over to their website to read Sister's answer to this question: Six Practical Means to Overcome Sins and Faults of the Tongue

Brother Francis: Let's Pray! {Catholic Children's DVDs}

You know my love for seeking out solid Catholic kids DVDs right?  I feel like I've hit the jackpot with this new one, it's called Brother Francis and it's created by Herald Kids.  Who is Brother Francis and what is this Catholic series about?  Here is the description from their website:
"Join Brother Francis and his friends as they inspire children in their Catholic faith.  This entertaining and instructive series features stories, visual examples, music and practical application!"
Practice makes perfect! This is a true saying whether one is playing basketball, drawing a picture, reading or even praying! In this wonderfully fun inaugural episode the ever-joyful Brother Francis will help your children establish a personal relationship with God!
This episode features:
  • “The Sign of the Cross” -- a catchy tune about an important prayer gesture.
  • “Let’s Pray!” -- a captivating song showing us how we can pray anywhere!
  • “The Our Father” -- the traditional prayer sung to a moving melody.
  • “With God’s Love!” -- a song that encourages us to serve others.
  • “The Little Way of Saint Therese” -- a visualized story . . . and lots of fun!

Faith Formation Features
The DVD we watched today is called Let's Pray! and it features two basic but important prayers,  The Sign of the Cross and The Our Father
and presented Saint Therese and her Little Way of doing things with big love.  It also includes two other authentic songs, "With God's Love!" and "Let's Pray!".

I love how this DVD starts and how Brother Francis compares prayer to sports (something kids can relate to) and basically to anything you want to do right, you have to practice it.  My kids laughed so much when Brother Francis explained the importance of attitude during prayer, if you want to make prayer boring, you pray in an uninterested way.  (Brother Francis goes on to pretend to fall asleep, my kids couldn't contain their laughter -wonder if they were relating to him?  LOL)  You don't want to have a conversation with anyone when you aren't interested in them do you?  Well why would you with God?

Animation
The animation is fantastic!  There are different kinds throughout but I just love how the main scenes of the video, although cartoons, the sky is always a real sky...which gives it a beautiful feel and a real one at that.  When the video went to talk about St. Therese the animation changed a little and made it look like it was older, which was neat because we were going back in time to learn about the little Saint!

Multiple Learning Styles
I also like that the video includes music and sets the prayers to music.  This helps all of our different kinds of learners, visual and auditory.  :)  I like that you can print activities out afterwards for the more tactile learners.  Each DVD has a set of print out pages with activities associated with the theme of the video and coloring pages as well.  There are a couple of pages recapping the main lessons of the video with some of the same illustrations from the DVD; I thought this was a neat feature.  My favorite page is the one called, "Lord, Help to be Holy", because it makes the kids really think about what they just learned in the DVD and almost make a little "pledge" or "promise" to God asking Him to make them Holy.  This page looks like this:

Languages
Since one of my goals this year is to expose the kids to more Spanish (my first language), I really love the fact that you can play the videos in English or in Spanish, El Hermano Zeferino.  We actually watched it in Spanish after watching it in English, it was great!  The Spanish was neutral Spanish (if you teach Spanish or a speaker, you know what I mean).  It was easy to listen and understand and follow.  This will definitely one of my go to resources to teach my kids prayers in Spanish!

Evaluation
Overall, I give this Brother Francis DVD entitled Let's Pray! an A+ for awesome illustrations, music, story line, and message!  This would make a great resource for every Catholic homeschool and also fantastic to have in our parishes as part of their Faith Formation programs.  Interested in ordering your own copy of this or any of the other Brother Francis DVDs?  Please visit Brother Francis at his website.

One of my most favorite Liturgical Celebrations (besides the obvious two big one: Christmas and Easter) has got to be All Saints Day!  I am enamored by the whole concept of the Communion of Saints.  Like I said in a post about Saints: Who needs Super Heroes when, as a Catholic, you have them, I love being able to ask those who are already in Heaven to pray for me and my little family!  :)  Here are some interesting facts about this beautiful celebration:
